As a staple of life our need to eat has developed from a basic form of simply feeding our bodies with the fuel it requires, to a complicated art of presentation and taste combined with our intrinsic need to experiment with everything we see, touch, smell and of course taste.

The ever-increasing divergence of foods that is now available to us at our local stores and eating-places only help to confuse and tantalise us into new culinary experiments and delights.

From the sandwich shop to the award winning restaurants, we can always find a place that prepares and sells the food we want at a reasonable price, although cooking or preparing food for ourselves may be a cheaper or healthier option it never seems to taste the same as our local restaurant. Most people that have cooked their own versions and varieties of local, Chinese, Indian or other international cuisine believes it does not have the same taste or texture and will often opt for a more authentic meal from their local restaurant or take away.

Cooking at home has become less of a choice and more of a chore. With the large amount of ready meals available, the option of spending time in the kitchen becomes less and less appealing. People are spending more of their time and money in the world of fast foods and restaurants. Although some believe this to be a bad thing it has fuelled a new market in available meals that are only a phone call away. As long as the health and hygiene departments vet these establishments and our choices are varied, of good quality and healthy their use can be a good alternative to cooking our own meals.

With the onset of fast foods and the quick cook and ready cooked meals available along with the ever increasing choice of world cuisine, the enjoyment of these different foods have opened new options to the consumer within the food market.

In today’s busy world where leisure time has become more and more important, the less time spent working and preparing to eat allows us more available time for our pursuit of our leisure activities.

People who do not have the ability, time or will to cook at home now only have to pick up the phone book or click on the Internet in order to find their local restaurant or fast food retailer that will be more than happy to deliver the freshly prepared hot food ready to eat straight to their door with minimum fuss.

Although the fast food retailers compete with each other fiercely, using their special offers and cheaper and healthier alternatives to entice us to their premises, the main stay of traditional restaurants still hold an important part in our lives.

Even though these places are vastly out numbered by the fast food industry, we still enjoy sitting down in the nice comfortable and pleasant surroundings of a restaurant and dining on good quality food at a leisurely pace, leaving behind the hustle and bustle of daily life and the fast food rush.

Traditional restaurants will always offer us that pleasant alternative to eating at home, ordering take out from our local fast food dispenser or visiting their drive through or small busy café style restaurants. Not forgetting those special occasions or romantic rendezvous, these still command the need for that quiet stylish quality restaurant where we know that the food wine and service will always be excellent and the experience wonderful and charming.

When you get close to your goal weight, you move into pre-maintenance and maintenance phases so that low carb choices become part of your everyday lifestyle.

Defining Low Carb Foods

Low carb foods are those that have low enough levels of carbohydrates that they are considered Atkins diet foods. In general, meats, poultry, fish, leafy green vegetables, eggs and butter form the core assortment of your low carb food choices. Some cheeses and other dairy products are relatively low carb but typically are not allowed in huge quantities while on the Atkins low carb diet plan.

Remember, though, a food which is high in carbs but also high in fiber can be eaten as part of a low carb lifestyle because the goal is to keep net carbs low, not just carbs as a whole. You can certainly remember a few core fresh foods that are allowable, but a really good tool is to carry a carb counter in your purse or pocket so that you can check it if you have any questions.

The big display of chips, candy, cookies and more is not a place you are likely find low carb choices, but if you go a little further in you can usually find official Atkins snack bars, liquid shakes or even some fresh foods that are low carb.

Restaurants can be a bit tricky because you do not always know what is in that great tasting gravy or sauce, but most eating establishments now offer designated low carb choices. If in doubt, order your meal without sauces and other add-ons that may have hidden carbs. When you find a restaurant that serves a good selection of low carb foods that you enjoy, be sure to give the manager or owner positive feedback and make that establishment a primary choice whenever you want to dine out.

Know About How To Make A Cornish Pasty

Being Cornish by birth, I cringe when I walk into a store or shop that supposedly sells the famous Cornish Pasty. More times than not, I pick it up, read the ingredients and toss it down in disgust! Strange things appear within the ingredients such as peas and carrots. Then when you read on a bit further, you get a hint of why they have got it so wrong. These Cornish Pasty forgeries are often made anywhere other than Cornwall!

Then there’s the pastry itself. Now I am not that brilliant at making pastry, but even I know the Cornish pasty has an outer layer of shortcrust and not puff pastry which is all air and nonsense!

Before we get into the recipe itself let’s talk about size. Have you seen those apologetic things in the store or shop ? Some of them should come with a magnifying glass so they can be seen! In my youth my mother would often make genuine Cornish pasties for us. By today’s commercial standards they were huge! They would overlap the edges of a dinner plate and be around four to five inches across at their widest point! Now THAT was a pasty!

Okay, so how do you make a genuine Cornish pasty? What do you put in it? Let’s go for it…it uses old style weights and measures sorry about that, but that’s my history…

Ingredients:

1lb shortcrust pastry 6 ounces potatoes 12 ounces steak (in times back it could well have been mutton … it was cheaper). 3 tablespoons of cold water 1 small chopped onion salt and pepper to taste …. personally I prefer a little extra pepper myself.

Method:

Start with the pastry. (I hope you have better luck with it than I do!). If you are not used to such large pasties, roll it out to the size of a small plate and about a quarter of an inch thick (the ingredients above are about the right quantity for this). When I make Cornish pasties though, they tend to be dinner plate size and the ingredients increased accordingly.

Cut all the solid ingredients up into small pieces. The onion should be finely cut. They are not only easier to eat this way, but cook quicker too. Remember to get rid of any gristle or fat etc from the meat.

Mix the now chopped up potatoes, meat, water, onion and salt and pepper thoroughly. (That’s another thing I find in those shop or store sold “Cornish” pasties …all the pepper seems to be concentrated into one spot! There you are munching away and then you suddenly hit that spot! I think you can guess the rest!)

Now we start getting toward the tricky bit. For more details go With the pastry laid out, use the ingredients to fill half of it in a bit of a pile …unless you want a flat pasty! Make sure though, that you leave about an inch clear pastry from the edge.

Dampen the exposed edge with water.

Carefully (if the pastry is too thin, this is the point at which holes start appearing …I speak from experience!), lift the empty half of the pastry over the top of the mixture. In effect, you are folding it in half.

At this point you could cheat to do the edging. If you want to, then press the edges together with the back of a fork to seal them. If you want a true-blue Cornish pasty though, you will need to master the art of “crimping”.

France And Their French Culinary Traditions

France is the home of French cuisine, and they set an amazingly high culinary standard to which all other native cuisines must live up to. The French have been the leaders and are recognized as the innovators in the culinary arts scene since the beginning of time, and most of the famous chefs in history are French. The well known and famous chefs that are not French, nevertheless, are trained in the art of cooking with the classical French style. Some of the finest cuisine in the world comes from France, and created by some of the finest master chefs in the world. The cooking knowledge and skills required to prepare a good culinary meal is something that the French people take excessive pride in when they present meals. Cooking is an essential part of the French culture, and it adds to one’s usefulness and talents if they are capable of preparing a good culinary meal.

France has many culinary regions and each one has a specific characteristic of its own food and area. Generally French food requires the use of many different types of sauces and gravies. The northwestern region of France produce recipes for cuisine that tends to require ingredients like apples, milk, butter and cream, and the meals tend to be extremely rich and sometimes rather heavy. Reminiscent of the German style of food, the southeastern area of France, the French cuisine is heavy in lard and meat products such as sauerkraut and pork sausage.

Many French restaurants cuisines can be classified as Cuisine Nouvelle, although, the more traditional French restaurant cuisine would be classified as Cuisine du Terroir rather than the French cooking style Cuisine Nouvelle. With the references to regional differences between the north and south, Cuisine du Terroir is an attempt to return to the more indigenous styles of French cooking, and also different areas such as Catalonia, Loire Valley and Rousillon. Their specific specialty of French cuisine makes these areas of France famous. As time goes on, the differences between white wines from the Loire Valley and wines from another area of France has slowly diminished, and the Cuisine du Terroir approach to French cooking focuses on establishing special characteristics between regions such as this.

In France, the French incorporate wine into nearly every culinary meal, and it is a big part of the French culture. The French drink wine simply as a refreshment or part of the recipe for the culinary meal itself. It is a part of traditional French culture to have at least one glass of wine on a daily basis, even today.
